Roasted Rack of Lamb Provençale

We've seared a 4-Bone Australian Lamb Rack (350g) with a mixture of Dijon mustard, garlic and Herbes de Provence, and cooked it sous vide to a beautiful medium-rare. The result is an insanely juicy and tender rack of lamb!
