We've seared a 4-Bone Australian Lamb Rack (300- 400g) with a mixture of Dijon mustard, garlic and Herbes de Provence, and cooked it sous vide with red wine rosemary demi-glace. The result is an insanely juicy and tender rack of lamb! Medium rare from edge to edge.
