Caribbean Jump -Up Stew

All the flavours of the Caribbean are packed into this stew. A rich vegetable broth accented with coconut milk, cinnamon, allspice, ginger and garlic, oh, and a few chilies to give it that 'Jump'! (don't fret, it's really pretty tame....but you can add a splash of hot sauce :) ) Lots of vegetables and tofu have been simmered in the broth to make this a protein packed bowl of goodness!

Pour this soup over the Rice and Beans (included) and OMG! A delicious totally plant based dish. (feel free to top it with shrimps if you are so inclined!)
